Veggie spaghetti stir

Makes: 4 to 6 Servings

1 lb Linguine, Spaghetti or Thin Spaghetti, uncooked
1/4 cup olive or vegetable oil
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery, chopped
2 tbsps parsley, finely chopped
1 1/2 tsps salt
1/2 tsp sugar
1/4 tsp pepper
2 16oz cans peeled tomatoes

1. Cook pasta according to package directions, drain. Put aside.
2. In a large skillet, heat oil; add onion, carrot and celery.
3. Cook and stir just until vegetables are tender.
4. Add parsley, sugar, salt, pepper and tomatoes, simmer on low heat for 20 minutes, stirring
frequently.
5. Toss pasta with sauce and serve.
